Pork burger with pineapple salsa

This is a fun recipe to make with the whole family - teach your children how to form their own meat patties.

Ingredients

3 tbsp Olive oil
2 Garlic cloves
1 Onion
1 tsp Cajun spice
600 g Pork mince
½ cup Breadcrumbs
1 to taste Salt & freshly ground pepper
½ Pineapple
1 Red onion
¼ cup Coriander leaves
1 Lime
2 loaves Turkish bread
¼ cup Aioli

Directions

  1. Heat a little oil in a frying pan and gently cook chopped garlic, chopped onion and Cajun spice until onion is tender.
  2. Transfer onion mixture to a bowl and mix with pork mince, fresh breadcrumbs and season with salt and pepper.
  3. Form meat into patties.
  4. Wipe out frying pan, add a little more oil and heat. Cook patties over a medium heat until coloured and cooked through.
  5. Meanwhile combine roughly chopped pineapple, red onion, coriander leaves and juice from one lime.
  6. Slice bread into 4 portions, then slice each in half. Toast or grill until golden.
  7. Spread each bread base with aioli and some pineapple salsa, cover with a pattie and then the bread lid.
