Directions

  1. Sift flour, cream of tartar, baking soda and sugar into a bowl.
  2. Beat egg and milk together. Make a well in the centre of the dry ingredients and stir in the egg mixture and melted butter.
  3. Heat a griddle or frying pan and cook tablespoons of mixture on a well-greased surface until bubbles start to appear on the pikelet. Place a few slices of banana on top and turn to cook the other side.
  4. Continue with remaining mixture. Serve warm with butter and a drizzle of honey.
