This easy to make salad is bursting with bright, festive colours. You can chop the ingredients ahead of time and assemble the salad just before serving.
Ingredients

| 1 kg | Watermelon, chopped |
| 125 g | Cherry tomatoes |
| 1 | Cucumber, chopped into 1.5cm pieces |
| 1 | Red onion |
| 150 g | Feta cheese, crumbled |
| 1 tbsp | Mint |
| ¼ cup | Red wine vinegar |
| ½ cup | Extra virgin olive oil |
| 1 garnish | Fresh mint |
Directions
- Combine the watermelon, tomatoes, cucumber, red onion, feta and mint on a serving platter.
- Combine vinegar and olive oil and drizzle over the salad.
- Scatter with mint and serve.
