Tortilla salad baskets
Re-work a taco salad with these great individual servings.
|1 to drizzle||Olive oil|
|200 g||Shaved ham|
|100 g||Mesclun leaves|
- Heat oven to 180 degrees C. Spray a six-hole Texas muffin tin with oil. Lightly spray the tortillas with oil. Push one tortilla into each hole of the muffin tin to form a basket - cut tortillas down a little first to fit if necessary.
- Bake for 10 minutes or until golden brown and crispy. Remove to cool completely.
- Fill crisp tortilla baskets with ham or pastrami,6 halved cherry tomatoes and salad leaves. Drizzle with olive oil just before serving.
