Char-grilled chicken, blood orange and asparagus

For a barbecue dish with a difference, try this chicken coloured with brilliant blood orange and fresh asparagus.

|16 stems||Asparagus, (trimmed)|
|4||Boneless chicken thighs|
|1||Salt & freshly ground pepper, (to season)|
|1 clove||Garlic, (crushed)|
|1 tsp||Brown sugar|
|2 tsp||Lemon juice|
|1 tbsp||Olive oil|
|1 tbsp||Fresh thyme|
- Preheat the grill. Brush the asparagus and chicken lightly with olive oil. Season well.
- Grill the chicken for approximately five minutes on each side, depending on size - until golden and crispy. Grill the asparagus for two to three minutes, turning until cooked - again depending on size.
- Whisk together the garlic, sugar, juice, oil and thyme. Taste for seasoning. Peel and segment the oranges. Plate the asparagus, chicken and oranges, drizzle with the dressing before serving.
