Mango, coconut and passionfruit lassi
( SERVES 4 )
Using yoghurt (especially the low-fat variety) and cashews makes this a treat that is good for you. If you want it sweet, use ripe and tasty mangoes and passionfruit.

|¼ cup||Cashew nuts, roasted and salted|
- Peel the mangoes, slice off the flesh and put into a blender.
- Cut the top off the coconut and pour the water into the blender.
- Add the ice, and blend while adding enough yoghurt until you have the desired consistency.
- Pour into chilled tumblers and top with cashews and a spoonful of passionfruit. Serve with a spoon.
