Hawaiian tuna poke
Try this for a great way to turn fresh fish into an easy snack.

- In a bowl combine 1 finely chopped spring onion, 2 tsp sesame oil, 2 tsp soysauce, 1 Tbsp sambal olek, and the zest of a lime.
- Grate enough fresh ginger to squeeze 1 Tbsp of juice into the mix.
- Add 450g very fresh diced tuna (or salmon) and 2 Tbsp crushed candlenuts or macadamia nuts. Combine and chill.
- Serve sprinkled with toasted seaweed or sesame seeds on freshly baked pita chips. Serves 8-12 as a snack.
