Salsa fresca (cooked tomato salsa)
Makes 2 cups

|3||Chipotle peppers, canned|
|½ tbsp||Ginger, grated|
|1||Lemon, zested and juiced|
|½ tsp||Smoked paprika|
|1 tbsp||Olive oil|
- Combine all the ingredients in a food processor and whiz until smooth.
- Remove to a saucepan and simmer, stirring frequently, until sauce thickens (20-30 minutes).
- Serve hot or cold with corn chips, or as a sauce in cooking.
