( SERVES 4 )

Sloppy Joes are toasted buns filled with a bolognese-type of mince sauce — definitely a dish for kids of all ages. Those aged 20 and over might even like to throw a little salad into their bun.

|1½ cups||Bolognaise sauce|
|1 tbsp||Red wine vinegar|
|1||Freshly ground black pepper, to season|
|2 tbsp||Parsley, finely chopped|
|8||Burger buns, small, split but not separated completely|
|2||Tomatoes, ripe, in thin wedges|
|3 slices||Red onions, ultra thin|
|1 pinch||Flaky sea salt|
- Mix Bolognese sauce and vinegar together over a medium heat until steaming hot. Add a good grind of pepper as well as the parsley. Spoon into a warmed serving bowl.
- Toast the cut surface of the buns on (or under) a grill. Butter lightly while still hot.
- Toss all salad ingredients together.
- Place sauce, hot buttered buns and salad on table (I recommend an outdoor table!) and allow people to help themselves.
